Ingredients

Cheese mixture

  • 250 grams ricotta
  • 500 grams cottage cheese
  • 2 eggs

Meat Mixture

  • 1 brown onion, peeled and quartered
  • 2 cloves garlic, peeled
  • 1 red capsicum, stalk and seeds removed, quartered
  • 1 zucchini, roughly chopped
  • 2 carrots, roughly chopped
  • 30 grams olive oil
  • 500 grams Beef mince
  • 2 tablespoons Mixed Herbs
  • 400 gram Tin whole tomatoes
  • 400 gram tin tomato soup

Ingredients

  • 400 grams fresh lasagne sheets
  • 100 grams parmesan, cubed

Recipe's preparation

  1. Place parmesan in bowl and grate for 5 seconds on speed 10. Set aside

  2. Without washing the bowl add all cheese mixture ingredients and mix 5-10 seconds on speed 4 until combined. Set aside.

    Wash and Dry bowl

  3. Place garlic and onion in bowl and chop 2 seconds on speed 7.

    Scrape down sides of the bowl and add olive oil. Sautee for 3 minutes, 120° on speed 1.

    Add zucchini, carrot and capsicum and chop for 3 seconds on speed 5. Repeat if you prefer a finer chop.

    Add mince and mixed herbs and cook 10 minutes, 100° speed 1 Counter-clockwise operation"Counter-clockwise operation"

    Add tinned tomatoes and soup and place simmering basket in place of mc to avoid splattering. Cook a further 10 minutes, 100° speed 1 Counter-clockwise operation"Counter-clockwise operation"

  4. Using a large baking dish (mine is 38cm x 24cm wide and 8cm deep) layer the ingredients starting with meat filling, followed by pasta sheets, then cheese filling until you have 3 layers of meat and 2 layers of cheese. Top with pasta sheets then sprinkle reserved parmesan over the top. Bake at 180° for 45 minutes.

Tip

Great dish for large families or when you want to cook large batches as it freezes really well.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
