Ingredients

Greek Chicken

  • 1/4 bunch Italian parsley
  • 2 cloves garlic
  • 20g olive oil
  • 1 red onion
  • 1ts Dried oregano (or fresh)
  • 500g chicken thighs, you can use double the amount & use less veg if you prefer
  • 1 red capsicum, chopped into rough chunks
  • 1 zuchinni, cubed, large chunks
  • 1 Large Sweet Potato, peeled & cubed (or white potato)
  • 1tbs TM stock concentrate
  • 100g pitted green or kalamata olives
  • 800g can Chopped Tomatoes
  • 100g crumbled feta cheese
  • salt & pepper, to taste

Recipe's preparation

    Greek Chicken
  1. Place parsley into the TM bowl & chop 2 secs speed 7. Scrape out half & place to one side.

    Add garlic to the TM bowl & chop for 2 secs speed 7. Add onion & chop for 5 secs speed 5. Add oregeno & oil cook for 3 mins varoma speed 1.

    Add chicken & sweet potato cook for 5 mins, 100 degrees Counter-clockwise operation"Counter-clockwise operation" speed 1. Add remaining ingredients except the feta. Cook for 20 mins, 100 degreesCounter-clockwise operation"Counter-clockwise operation" speed1.

    Serve with reserved chopped parsley & feta sprinkled on top.

Tip

Depending on the size of your vegies you may not be able to fit it all in the TM bowl so you could use less tomatoes if it won't all fit or put some of the veg in the varoma & cook the meal on Varoma temperature.
