Ingredients

  • 600 g Chicken 3cm diced
  • 2 cloves garlic
  • 1 Onion halved
  • 30 g coconut oil or (EVOO)
  • 35 g Dijon mustard
  • 35 g honey
  • 20 g apple cider vinegar
  • 1 tablespoon TM stock paste
  • 1/2 teaspoon tumeric
  • 20 g Gluten free plain flour
  • 1 can coconut cream, Ayam brand 270ml
  • 50 g water
  • 150-200 g Mixed vegetables, chopped, carrot, capsicum and beans

Recipe's preparation

  1. 1. Place garlic and onion into TM bowl and chop 3seconds sp7

    2. Weigh in Coconut Oil (or EVOO) and saute 5 minutes varoma temp sp2. Use this time to chop your veges and chicken.

    3.  Weigh in dijon mustard, honey, apple cider vinegar, stock paste, tumeric and GF plain flour. Mix sp3 3 seconds.


    4. Weigh in chicken and mix on Counter-clockwise operation"Counter-clockwise operation" sp 1 varoma 2 minutes.

     

    5. Add Coconut cream, water and veges and cook 20 minutes 100degrees speedGentle stir setting"Gentle stir setting" on Counter-clockwise operation"Counter-clockwise operation" function.

    You can leave the mc off for the final 10 minutes to help reduce down the liquid if required. 

    Serve with rice or pasta. 

Tip

If you are not avoiding Gluten and Dairy, you can substitute the GF flour for regular plain, and the coconut cream for cooking cream or sour cream.

    delicious! Maybe I'd skip the water next time and do half Dijon and whole grain mustard but very nice made tons of sauce so we saved half for the freezer for another meal

    This was amazing, used plain flour (not GF plain flour) with coconut cream and left the mc one the whole cooking time and the sauce had the right amount of thickness for us

    We had this last night and really enjoyed it. Not too sweet with heaps of flavour. I used ordinary flour as I didn't have GF. Will certainly have it again.

    Great - had to increase ingredients by 50% (except honey) to match 1kg of thigh chicken.
    Whole can of Trident Coconut Cream (400ml) so no water.

    And for more 'grown up' taste added a couple of tspns of Wholegrain mustard & extra Dijon

    Quick & Delicious - Thank you for this great recipe. No more jar version for us! I used rice bran oil instead of coconut oil, and sour cream instead of coconut cream. I will omit the water next time. Was a little to runny but that is my only fault with this dish
