Ingredients

Marinade

  • 1 tsp salt
  • 1/4 tsp peppercorns whole
  • zest of one lemon
  • 3 cloves garlic
  • 3-4 sprigs rosemary, leaves only, (long sprigs!)
  • 100 g olive oil

Meat

  • Lamb Ribs, about 1 kg

Recipe's preparation

    Make the Marinade
  1. Add the salt, peppercorns and lemon zest to a clean, dry bowl and blitz for 20 seconds / speed 9

  2. Add the garlic and rosemary and blitz for 10-15 seconds / speed 7.  

  3. Add olive oil and combine for 5 seconds / speed 4.

  4. Pour over the ribs and allow to marinate in the fridge for at least an hour (preferrably 24 hours, if you have time!) and then cook on the BBQ.

Tip

You could use this marinade mixture on any lamb cuts or on vegetables, if you prefer. 

You can buy lamb ribs at Woolworths or your local butcher.

    Fantastic. I didnt have any lemons so I used orange zest instead. It was delicious. I used diced lamb.

    This was so easy and delicious. I actually just used dried rosemary and I added some lemon juice too. Kids even asked for seconds. I used it on lamb kebabs.
