Ingredients

Chicken and Marinade

  • 3 teaspoons ground paprika
  • 1 teaspoon chilli powder
  • 1 teaspoon Ground Coriander
  • 1/2 teaspoon Garlic Salt
  • black pepper, to taste
  • 50g --- olive oil
  • 2 garlic cloves
  • 50g --- chopped tomatoes, canned
  • 500 grams chicken fillet (breast or thigh, whatever is your preference), diced into 2-3 cm pieces
  • Juice of 1 lime
  • 1 litre water, for steaming
  • any veggies you like, I used diced eggplant and carrot

Recipe's preparation

  1. 1. Place paprika, chilli powder, coriander, garlic salt, pepper, olive oil, garlic cloves and tomatoes into TM bowl and mix 2 seconds on speed 9.  Scrape down bowl and repeat 3 times.  Add diced chicken to the bowl and mix with the marinade for 10 seconds on speed 2, REVERSE.  Remove and set aside in a separate bowl.  Cover with cling wrap and allow to marinade in the fridge for an hour or longer if you have time.

     

    2. Once chicken has marinated for at least an hour, thread chicken onto skewers and place into top Varoma tray.

     

    3. Cut up the veggies and place in bottom Varoma dish.

     

    4. Add water to TM bowl and place lid and Varoma into position.

     

    5. Cook for 20minutes, varoma, speed 4. 

     

    6. Check that the chicken is cooked, add a few more minutes if needed.

     

    7. Squeeze lime juice over chicken before serving.

    Very tasty, nice recipe. I also cooked some brown rice as well. I started cooking 1 cup brown rice for 15 min while the chicken was marinating then let it cook for a further 20 with the rest of the meal. So for those that want a possibly feed more this would help.

    Such a simple yet yummy meal! The flavour was delicious but I think next time I will BBQ them or after cooked put them on a fry pan just for a lil crisp.
