Ingredients

Basic Soup

  • 1 litre water
  • 2 tablespoons EDC Vegetable Stock
  • 20 g soy sauce
  • 1 package noodles, Eg Hokkein or Singapore1
  • 1/2 piece ginger, Eg 1/2 nob

Optional toppings

  • 100 g cooked chicken
  • 1 carrot
  • 50 g Dried Onions

Recipe's preparation

    Basic soup
  1. Place water, stock, soy sauce and ginger in Closed lid"Closed lid" . Heat to boiling (8 mins, Varoma, Speed 2). Place noodles in TM basket and heat 2 mins 100 deg Speed 2. Carefully raise the basket using the spatula and separate noodles gently with a fork. Place noodles in two bowls then pour stock over the noodles to your liking. Stir in any extras of your choice, eg finely diced cooked chicken, then top with shallots, dried onions etc.

     

Tip

 

 I created this recipe as I wanted to replace those store bought 2 Min Noodles which are full of preservatives and excess packaging, and provide a filling and healthy afternoon tea for teens. It's very simple and suits my family's' tastes plus I have these ingredients handy. You might like to use less salt (EDC stock), or be more creative eg use the Asian Stock recipe, add finely diced carrot at the start etc. The dried onions can be bought at Asian grocery stores; they add a great crunch to the soup.

    Added1tbsp Mirin and shallots today as an alternative. Still delicious and filling.
