Ingredients
- 150 grams spicy chorizo sausage, (about 8cm long)
- 2 level tablespoons EVOO (extra virgin olive oil)
- 1 brown onion, peeled
- 4 cloves garlic, peeled
- 2 level teaspoons rigani or dried oregano
- 1 bay leaf
- 50 grams red wine vinegar
- 1 sachet tomato paste
- 400 gram tin of chickpeas, drained
- 400 gram tin of cannellini beans, drained
- 400 gram tin of crushed tomatoes
- 4 free range eggs, room temperature
- 50 grams Fetta Cheese, crumbled (optional)
- fresh sourdough bread, sliced
- 1 long red chillies, seeds in (optional)
- salt and pepper to taste
- 4 handfuls baby spinach
- 1 level teaspoon smoked paprika

I'm cooking this todayRecipe's preparation
put onion, garlic and chilli in TM and chop for 3 seconds at speed 7
slice chorizo in half lengthways, then slice on the angle in half moons, then add to TM
add olive oil and cook for 6 minutes, speed 1, reverse, 100 degrees
add vinegar, tomato paste, tinned tomatoes, chick peas, cannellini beans, bay leaf , paprika and oregano. cook for 6 minutes, speed 1, reverse, 100 degrees MC off
put one handful of spinach in each of 4 shallow dishes, then divide tomato mix into each of the bowls
put 500 ml of water into TM bowl and cook for 8 mins, varoma, speed 4
put a dent in the tomato mix in each bowl and carefully crack one egg into each dent
place the bowls on the varoma tray and steam for 8 mins, varoma, speed 4 (i had to do them in shifts because my bowls weren't a good shape)
while this is cooking, toast the sourdough slices
check to see if egg white is cooked- yolk should be runny. sprinkle fetta over the bowls and eat immediately

A family fav. I skip the varoma bit and put in the oven to bake the eggs.
