Ingredients
- 3 cups Coconut Flakes
- 2 cups Mixed nuts and seeds, (e.g almonds, cashews, walnuts, pepitas, sunflower seeds, brazil nus, pecans) I use a handful of each of whatever I have in the pantry
- 2 tablespoons chia seeds
- 1/2 cup melted Coconut Oil
- 3 tablespoons Rice-malt Syrup, (or 1/4 cup maple syrup or raw honey if you prefer)
- 1 teaspoon ground cinnamon
- 1 teaspoon good quality Vanilla Extrac
- 1 generous pinch Sea Salt

Prehead your oven to 120 degrees (250 degrees Fahrenheit)
Line a large baking tray with baking paper.
Put the coconut flakes in a large bowl, set aside.
Add the nuts, rice malt syrup (or sweetener of your choice), chia seeds, coconut oil, cinnamon, vanilla and sea salt. PUt dial to 'closed lid' position and press turbo for a second, 2-3 times or until the texture is to your liking.
Add the nut mixture to the coconut flakes in the bowl and stir until well combined.
Lay the museli mixture out on the baking tray. Spread it evenly. Bake for about 20 minutes or until golden brown. After about 10 minutes give it a good toss. You'll need to keep an ey on it - check at 15 minutes, you mihgt need to go 25 minutes to get the colour and crispiness.
Remove from the oven and cool. Serve with your choice of milk, or natural yoghurt and fruit. I love mine with natural organic yoghurt, strawberries and prunes.

Made this last night and thoroughly enjoyed it this morning with a little milk plus yoghurt and strawberries. Can't wait for my daughter to try it and compare with the grain muesli she makes which I find too heavy and bulky.
