Ingredients
- 270 g full fat coconut milk, I like to use the Ayam brand
- 40 g water
- 1 free range egg
- 1/3 --- cup Coconut Sugar (or Rapadura Sugar
- 1/2 teaspoon vanilla extract
- 1 tablespoon Arrowroot (Tapioca Flour), or you can use gluten free corn flour
- 1 1/2 tablespoon Cacao, Sometimes I use the Nutra Organics Berry Choc Chunk superfood powder

Place all the ingredients in your Thermomix and cook for 6-7 minutes, 90 degrees, speed 4.
Tip
For a vanilla custard you can omit the cacao. Both versions are divine! Serves 4 but recipe easily doubled. Delicious served with cold berries for dessert, poached pears for a grown up dessert or even breakfast!

Yum! I made this with regular milk, no water, a dash as sugar as that's the ingredients I had on hand! Very, very nice and better than adding extra fat with chocolate. Looking forward to trying the coconut milk version soon. Thank you for sharing your recipe!
