Ingredients
Brownie Base
- 500 g sweet potato, peeled and diced
- 40 g Kale, shredded, stalks removed (about 1 cup)
- 200 g pitted medijool dates, (about 14 dates)
- 1/2 Cup Buckwheat flour, (or you can substitute with almond meal or tapioca (arrowroot) flour
- 1/4 cup cacao
- 1 teaspoon vanilla extract
- 1 pinch sea salt
- 2 large organic free range eggs
- 1/2 teaspoon baking powder, aluminium free
Chocolate Ganache
- 100 g dark chocolate
- 100 g coconut cream
- 1 teaspoon vanilla extract
- 25 g Butter or coconut oil

Place the sweet potato and kale into the mixing bowl with 100 grams of water and cook 100 degrees, 10 minutes, speed 2, reverse.
When cooked blitz 20 seconds, speed 8. Scrape down bowl and blitz 10 seconds, speed 9.
Add dates and mix 10 seconds, speed 9.
Add the remaining ingredients and mix 7 seconds, speed 7. Scrape down and repeat another 2 times until well combined.
Pour into a greased and lined square baking tin and bake for 18-20 minutes, 180 degrees celcius until cooked through. Allow to cool before icing.
Place chocolate into mixing bowl and blitz 8 seconds, speed 9.
Add the remaining ingredients and cook 3 minutes, 50 degrees, speed 3.
Pour ganache over the cooled brownie and make sure it is evenly spread out. Put in fridge until icing is set. Cut into squares and serve immediately or store in an airtight container in the fridge.

Tip
These are perfect for school lunches as they are nut free. They are just as delicious if not iced - might be a little less messy for little fingers that way!
