Ingredients

Curry Gravy base

  • 20mls olive oil
  • 1 brown onion
  • 2 garlic clove
  • 2 tbsp curry powder, You could also use Madras curry powder for a stronger flavour
  • 1 tsp all spice
  • 1 tsp Nutmeg
  • 1.5 tsp smoked paprika
  • 2 tsp dried thyme leaves
  • 1 tsp Cumin Powder
  • 1/2 tsp black pepper, freshly ground
  • 1 tsp Fresh or dried chilli, optional if youd like to add heat/spice

curry

  • 2 medium sized potatoes or 1 large sweet potato, chopped into 1.5cm peices
  • 2 cans of chickpeas, drained
  • 1 can of diced tomatoes
  • 2 cups of vegetable/chicken stock, I used 2 'chicken' Massels brand stock cubes
  • 2 tbsp fresh parsley
  • salt to taste

    Instructions
  1. 1. Add garlic and onion in the TM bowl 5 sec / speed 7/ MC on. Scrape sides of the bowl and blitz again if needed

    2. Add oil into TM bowl 1min / 60oC / speed 2. Scrape sides of the bowl again

    3. Add the rest of Curry gravy base ingredients to onion/garlic in TM bowl and cook for 3 mins/ varoma/ Counter-clockwise operation"Counter-clockwise operation" / speed 0.5

    4. Butterfly whisk on. Add the potatoes /2 mins/ varoma/Counter-clockwise operation"Counter-clockwise operation" /simmering basket on** If the spices start to stick to the bottom of the bowl,add a tiny splash of water.

    5. Add the chickpeas, tomatoes and vegetable or chicken stock. 20 mins/ Counter-clockwise operation"Counter-clockwise operation" / speed 1/ varoma/ simmering basket on top

    **Time can differ depending on potatoes, cook until potatoes are soft/cooked and sauce has thickened

    6. Add parsley and cook for further 2 mins. Add salt to taste

    7.Serve with rice

    Made with 1 fresh chilli without seeds and not very hot so will add seeds next time. Easy to make. The TM bowl was quite full so need to be careful with the quantities of vegetables. This made 6 meals for us (2 people x 3 meals each). Thank you for the recipe.
