Ingredients

  • 50 g olive oil
  • 2 large onion, peeled and quartered
  • 2 Zucchini grated, diced
  • 2 stalk Celery, diced
  • 1/2 tspeach of ground: ginger, cumin, turmeric
  • 1 level tspground coriander
  • 1 tsp sea salt
  • 1 cup chopped parsley
  • 800 g cooked chick peas ( 2 x 400 g tinned, drained)
  • 400 gdiced tin of tomatoes
  • 250 g chicken, /veg liquid stock
  • (or 250 g water with1 tsp, TM veg stock paste)
  • 2 level tbsp fresh lemon juice, (Or to taste)

Recipe's preparation

  1. Place onions into TM bowl 3 seconds on speed 5.

     Add oil, celery, zucchini and spices and saute for 5 mins at varoma temp on Counter-clockwise operation"Counter-clockwise operation" speed 1.

    Add remaining ingredients and cook for 15 minutes at 100°C on Counter-clockwise operation"Counter-clockwise operation" speed soft.

     Transfer to Thermoserver and allow to sit for approx 10-15mins. 

    Serve with couscous, fresh coriander leaves and a wedge of lemon

    My husband just made this for dinner and was great! I had my doubts. Only had one tin of chickpeas and was still delicious. Thank you tmrc_emoticons.) also made some flat bread to go with.

    tmrc_emoticons.) I made this for dinner the other night. I only had one can of chickpeas so I used chickpeas with kidney beans, and fresh coriander at the end instead of ground. I served it with garlic quinoa (white quinoa, made with garlic as per the quirky cooking blog.) It was delicious, kept well in the fridge, and made enough for 5 one-person meals. I'll try to do it properly next time, but it was delicious even with variations!
