  • 45 g Parmesan cheese, cubed
  • 1-2 cloves garlic
  • 150 g pine nuts
  • 4 sprigs basil
  • 30 g baby spinach
  • 80 g olive oil
  • 300 g full fat cream

Recipe's preparation

    Method
  1. Place cubed parmesan into TM bowl on speed 9/3 seconds.

    Set parmesan aside.

     

  2. Place garlic, pine nuts, basil and baby spinach into TM bowl and blitz for 10 seconds/speed 8. Scrape down sides. Add parmesan to mix.

    Slowly incorporate olive oil with blades rotating on speed 6 through the TM measuring cup hole.

  3. Refrigerate pesto till required.

Tip

I only use HALF of the pesto to 300ml of full fat cream.

Serve with PASTA, GNOCCHI or even RICE.

    Thank you Thinking Thermomix, so true about omitting the cream and just having a pesto. My husband isn't a huge fan of cream but he also loves the creamy sauce with the gnocchi. X

    This was delicious, my very fussy husband was very impressed. The creaminess was great with gnocchi. It was actually also great without the cream, just as a plain pesto with penne, yum both ways!
