Ingredients

Coating

  • 25 g parmesean
  • 80 g polenta -medium grain

Falafel

  • 180 g Chickpeas, soaked overnight
  • 40 g rice
  • 200 g carrots diced
  • 1 shallot or 1/2 red onion
  • 1 tsp cumin
  • 1 tsp smoky paprika
  • 1 tsp ground coriander seeds
  • 1/2 tsp salt
  • 1/4 tsp chilli flakes dried
  • 1 tsp baking powder
  • grated zest of 1 lemon

Recipe's preparation

    Coating
  1. Place cubed parmesan in Thermomix and mill on speed 9/ 15 seconds.Combine Parmesan and polenta in a separate bowl

  2. Falafel
  3. Place all remaining ingredients in the Thermomix and blend for 15 seconds/ speed 6 to form a coarse paste.

     

     

    Form the falafel into golf ball sized spheres and coat in mixture of polenta and parmesan.

     

     

    These can be cooked straight away but they improve in texture on sitting in the fridge for 30 minutes. They can be prepared well in advance and stored in fridge for three days

     

     

    To cook the falafel put equal quantities of butter and oil in a non - ”stick frypan and shallow fry. I used 2 Tbsp of oil and 2 tbsp of butter. Cook until crisp and golden.

     

     

Tip

 

Serving Suggestions,: Soft yogurt flat bread, greek yogurt, coleslaw and chilli jam

These are also very good reheated and can be served as finger food or a lunch box snack.

    Even after putting the balls in the fridge for hours prior to pan frying they completely fell apart. Baked the rest in the oven & they held together nicely but i just found them a bit flavourless sorry, also the rice didnt really grind so they are definitley crunchy! Not sure what i did wrong tmrc_emoticons.(

    Tasty but they fell apart. Next time I would defintiely not cook them straight away and let them set in fridge.

    I have made these many times! I have shallow fried them and also baked them in the oven to try and keep them in the correct shape.  No matter what they look like when cooked... my family devours them!  Thank you for another fantastic recipe! tmrc_emoticons.)

    These were awesome. I omitted the coating and served with sweet chilli sauce mixed with yoghurt. they are a little fragile but firm up and hold together once cooked.

    No the rice and chickpeas are both uncooked.  The rice ends up being ground - so I suppose it turns to ground rice. And the chickpeas turn to ground chickpeas like besam flour. Hope that makes sense.
