Ingredients
SOUP
- 1 onion brown, peeled and cut in half
- 1 carrot, cut in 3-4 pieces
- 1 celery stalk, roughly chopped
- 2 cloves garlic
- 2 tsp curry powder
- 1/2 tsp Ground Coriander
- 1/2 tsp ground cumin
- 20 grams olive oil
- 1 tablespoon TM vege stock concentrate
- 600 grams kumara, peeled and chopped roughly
- 800 grams water
- 1/2 tsp ground cinnamon
OTT Garnish
- 1/4 red pepper, chopped finely
- 1 celery stalk, chopped finely
- 1 tomato, diced
- 5 cm cucumber, diced
- 100 grams Edamame (shelled), steamed

I'm cooking this todayRecipe's preparation
- Place carrot, onion, celery, garlic and dry spices into mixing bowl and chop 5-10 seconds/speed 7.
- Add oil and sauté Varoma/5min/speed 1.
- Place 100g shelled Edamame Beans in the Varoma and place on to of the mixing bowl.
- Add all remaining ingredients 17 min/Varoma/speed 1.
- During this time chop & dice the garnish ingredients and place in a bowl.
- Allow to cool slightly, remove the varoma and then blend 20-30 seconds/speed 9, NB start at speed 5 and gradually increase to speed 9.
- Add the edamame beans to the bowl of garnish
- Place the soup in a Thermoserver until ready to serve up.
Alternatives
Instead of the OTT Garnish of salad:
steam Edamame Pods in the Varoma. They need approximately 20 minutes.
garnish with caramalised onions (preprepared)
Slices of avocado and a few chilli flakes (go lightly)
Your imagination is the limit. Think colour contrasts and have some fun with it.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -
