Eggplant Parmigana
- 2 heaped tablespoons EVO
- 1000 grams tomato passata
- 1 onion
- 500 g mozzarella
- 170 g Parmesan cheese, grated
- oil for shallow frying
- 2 eggplants, peeled
Batter
- 4 cloves garlic, minced
- 4 eggs
- 500 grams flour
- 40 grams Parmesan cheese, grated
- 500 grams water, 1/3 extra
- S&P
- parsley

- Chop peeled onion Sp7 for 3sec scrap down.
Add oil to saute for 1min on VaromaSp2.
Add Tomato Passata cook 30min at Varoma on "Gentle stir setting" - Place garlic and parsley TM bowl mince on Sp8 20sec scrap down.
Add remaining ingrediant keeping 1/3 of the water back and mix on Sp5 until combined, and extra water to make batter of coating consistency not to thick pour into a bowl.
Slice eggplant can use mandoline to 1/4" thick/6mm
Coat eggplant and shallow fry each side to a light golden color,place on kitchen paper to drain. - Assemble
Coat deep dish with tomato pasata place 1 layer off fried eggplant to cover entire bottom thin coat of sauce then sprinkle some parmigiano and mozzarella cheese.
Repeat the layering process until you reach top of pan,last layer has generous amount of cheeses.
Bake in oven 400F 30min let rest 10min before serving
