Ingredients
Tart
- 2 Ready-made butter puff pastry sheets
- 1 Leek roughly chopped, white part only
- 20 g Butter
- 140 g sour cream
- 140 g cream
- 3 eggs
- 200 g mixed cheeses (mainly feta, others can be ricotta, blue vein etc), crumbed
- 160 g Baby Spinach Leaves
- Cracked Pepper, to taste

Preheat oven to 200*C and grease flan tin.
2. Put the leek in the TM bowl and chop for 3 sec, speed 7.
3. Add the Butter and saute for 3 minutes, veroma temp, speed 1, ( set aside ).
4. Put the Sour Cream, Cream and eggs into the TM bowl and mix for 20 sec, speed 4, reverse.
5. Add the Feta, Leek, Spinach and season with pepper. Mix for 20 sec, speed 4, reverse.
6. Grease the flan tin and line with the puff pastry, over lapping and gently joining the pastry sheets together in the middle. Gently push the pastry into the sides of the flan tin and trim the edges of excess pastry. Prick pastry with a fork.
7. Pour the prepared filling mixture into the pastry case and bake in the middle of the oven for 30 to 35 minutes, or until firm and golden.
8. Remove from the flan tin before cutting and serving.

Fabulous.
My leek was on the smallish side so I boosted it with a couple of cloves of garlic and used up some left over blue vein cheese (80g) with 120g feta - will definitely be making this again

2nd time I increased the leeks and added labna cheese to the pastry before the egg mix went on
