Ingredients

Nacho mix

  • 1 carrot, roughly cut
  • 1 zucchini, roughly cut
  • 1 brown onion, peeled and quartered
  • 2 cloves garlic, peeled
  • 30 g olive oil
  • 1 tin of diced tomatoes
  • 1 sachet taco mix
  • 2 tins of red kidney beans, drained and rinsed

To serve:

  • Corn chips, grated tasty cheese, sour cream, chopped spring onion and coriander top serve
  • 4 ramekins or oven-proof bowls to cook and serve nachos in

Recipe's preparation

    Nacho mix
    1. 1. Place carrot and garlic in TM bowl and chop for 5 seconds on speed 5
    2. 2. Add onion and zucchini and chop on speed 4 for 8-10 seconds, or until they resemble mince
    3. 3. Add oil and taco mix and sauté for 10 minutes at 100 on reverse speed 1Counter-clockwise operation"Counter-clockwise operation"
    4. 4. Add tomatoes and kidney beans and cook for 15 minutes at 90 on reverse speed 1Counter-clockwise operation"Counter-clockwise operation"
    5. 5. Divide mixture among four individual bowls or ramekins, top with corn chips and grated cheese then grill until the cheese is melted and starts to bubble
    6. 6. Top with a spoon of sour cream and sprinkle with spring onion and coriander leaves

    My family loves this recipe. Hubby prefers meat but he really likes this one. I have made this a few times now and just make 2 trays of nachos to share. Thanks!

    I just used the nacho mix in a wrap with salad. The kids and hubby loved it. I also added a tin of lentils just to make the meal spread over two nights. Would also go great with rice tmrc_emoticons.-)

    Yum!

    The kids asked for more! I only used 1 can of a 5 bean mix, ( instead of 2 red kidney). I didn't grill cheese as the sauce was hot enough to melt it. Straight onto the plate lined with corn chips. Have already recommended it to a friend! Will make again.

    Great vegetarian recipe thank you! I made this for my husband as I'm constantly looking for vegetarian recipe options. He didn't realise it had no meat in it until I told him and he wasn't disappointed! Plan to use it also as a vegetarian chilli con carne recipe served on rice.

    I don't think 22 garlic cloves is right, I used 2. tmrc_emoticons.;) I also added 1 can of kidney beans with diced toms (this was ommited from the preperation stage).

    I also added all the left over veg from the fridge, sweet potato, mushrooms, brocoli carrots and capsicum. Yum, we love Nachos so it is good to try a different receipe!
