Ingredients

  • 1 onion, peeled and quartered
  • 1/4 butternut pumpkin, peeled, seeded and cut into cubes
  • 1/2 head Cauliflower, cut into small florets
  • 1 whole fresh red chilli, deseeded
  • 2 cloves garlic, peeled
  • 30 grams olive oil
  • 1 bunch fresh coriander
  • 1 400g tin chickpeas, with liquid
  • 1/2 283g jar of Patak's Rogan Josh paste
  • 100 grams baby spinach
  • Coriander, natural yogurt, poppadums and rice or cous cous to serve

Recipe's preparation

  1. Place onion, garlic & chilli in TM bowl and chop for 3 seconds on speed 6

    2. Add olive oil and 1/2 MC of water and saute for 4 minutes at varoma temp on speed 1

    3. Add rogan josh paste, pumpkin, cauliflower, coriander, chickpeas and liquid, one MC of hot water and cook for 18-20 minutes at 100 on reverse, speed soft, check if the pumpkin is cooked

    4. Put spinach in the thermosaver and pour curry over the top. Mix and serve with rice and natural yogurt.

    Thanks for posting this Donna Bathy, it is really similar to an old stove top fav of our household, so i was excited to try it. The only thing I did that was different to your methods is that I added the coriander to step 1 with the garlic, chilli and onion so it was chopped finely. It worked well, maybe a bit smaller in veggie size to the stove top version but Hubby and I agreed this veggie sizing was better as it allowed the flavours to develop better.

    Thanksfor the yummy veg curry, we have added it to our regular list.

    this curry was awesome. the best i've made in the thermomix.

    I used different vegetables though - potato, carrot, broccoli & peas (as well as the spinach & chick peas).

    So glad I found a curry I am happy with

    Made this on my second day as a thermomix owner. Usually I would make this in a pot on the stove. Kids reckon it is just as good as the stove top version. I think it has come out quite well. Part way through step 3 I put the blades in reverse. Glad I dd as it came out a bit too finely chopped. Next time I would use reverse from the start of step 3.
