Ingredients

lentil and spinach curry

  • 30 grams olive oil
  • 1 onion, peeled, cut into halves
  • 1 clove garlic, peeled
  • 1 carrot, peeled, cut into 3cm pieces
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • 480 grams red lentils, rinsed
  • 2 tablespoon vegetable stock, concentrate
  • 1000 grams water
  • 250 grams spinach, fresh or frozen
  • salt and peper to taste

Recipe's preparation

  1. Place oil, onion, garlic and carrot into the mixing bowl.  Chop 3 seconds, speed 7.  Scrape down sides of bowl with spatula.

  2. Saute 3 mins, 120 degrees, speed 1.

  3. Add garam marsala and turmeric.  Saute 3 mins, 120 degrees, speed 1.

  4. Add stock concentrate, water and lentils.  Cook 15 minutes, 100 degress,Counter-clockwise operation"Counter-clockwise operation" speed 1.

  5. Add spinach and cook 5 mins, 100 degrees, Counter-clockwise operation"Counter-clockwise operation" speed 1.

  6. Season to taste and serve.

Tip

Serve over white rice with mango chutney, mint raita and naan bread.

    Great thanks. I had no carrot so replaced with sweet potato which worked fine.

    I think this would be really nice with coconut milk added. I had some spare broccolini and fresh asparagus in the fridge so added that also.

    This is really yummy. I have been making dahl  (lentil curry) for years, but this is the first time in the thermomix. I added 15g of fresh ginger in with the garlic, carrot and onion (I only used 1/2 an onion) I also upped the spices so had 2 teaspoons of garam masala, and added 2 teaspoons of cumin as well. Will definitely make again and sometimes i will omit the spinach.....it would taste just as good!
