Ingredients

Quinoa

  • 400 grams quinoa, rinsed
  • 1 tablespoon vegetable stock

salad

  • 30 grams red onion
  • 1 lemon, rind & juice
  • 1 large beetroot, peeled
  • 250 grams broccoli
  • 130 grams pistachios, shelled
  • 60 grams Goji Berries
  • 250 grams cherry tomatoes, halved
  • 1 pomegranite
  • 3 tablespoons olive oil
  • salt, to taste
  • Freshly ground black pepper

Recipe's preparation

  1.  


    Place the quinoa into the basket and rinse. Put basket into bowl. Add water and stock and cook 15 minutes, varoma speed 3. Pour quinoa into serving dish and discard liquid. Clean bowl.


    Mill lemon rind 10 sec speed 7.


    Add red onion and beetroot to bowl and chop 2 sec speed 5.


    Add broccoli and pistachios to bowl, chop 2 sec speed 5.


    Add chopped veggies to warm quinoa and stir through. 


    Add cherry tomatoes, goji berries, olive oil and lemon juice, salt and black pepper to taste. Mix well.


    Cut the pomegranite in half and with the back of the spatula tap the seeds out into the mix and squeeze any juice over the top.

Tip

You can use a mix of black, white and red quiona as well.

You can use the broccoli stalks as they are a great source if nutriens and fibre.

Store left overs in air tight container in fridge.

    i used only half the quinoa and it was more then enough
