Ingredients
Rainbow Sauce
- 4 cloves garlic, about 15g
- 1 brown onion, halved, about 100g
- 1-2 Red onions, halved, about 150g
- 1 red capsicum, roughly chopped, about 250g
- 30 grams olive oil
- 1 eggplant, roughly chopped, about 150g
- 1/2 bunch english spinich, roughly chopped, about 120g
- 2-3 yellow squash, halved, about 200g
- 1 Broccoli Head, quartered, about 240g
- 1 green apple, quartered and cored
- 200g canned or fresh tomatoes
- 2 sprigs rosemary, fresh, leaves only
- 4 sprigs parsley, fresh, including stalks
- 3 sprigs basil, fresh, leaves only
- 80 grams apple cider vinegar
- 30 grams honey
- 40 grams TMX vegetable stock paste
- pepper to taste
- 300 grams water or liquid stock, optional
- 200 grams dried red lentils
Voodles
- 2-3 zucchini, roughly chopped, about 340g
- 3-4 carrots, roughly chopped, about 340g
Meat Option
- 2-3 chicken breasts, cut into strips

Place the varoma on top of the assembled bowl and lid and bring up the scales. Using a vegetable spiral, cut zucchini and carrots into spirals and place in the varoma.
If you are using meat, place the varoma tray on top of the voodles and arrange stips of chicken over the tray. Season to taste if desired.
If no meat is used, you can continue to add voodles to fill the varoma.
Set aside varoma with lid on.
To the bowl add garlic, onions, capsicum and oil. Chop 5 secs/speed 5. Saute 6 mins/varoma/speed 1.
Prepare voodles, meat and vegetables.
To the bowl add the remaining vegetalbes and herbs (eggplant, spinich, squash, broccoli, apple, tomatoes, rosemary, parsley, basil) and chop 5 secs/speed 5. You may need to add vegetables in two batches and chop down inbetween. Do not overfill the bowl.
Scrape down lid and bowl. Weigh in vinegar, honey, stock and pepper. Blend 1 min/speed 8.
Remove the lid and add 100-200g water or stock to the 2L mark on the bowl. Replace lid and measuring up and cook 20 mins/100 degrees/speed 2.
Remove lid and weigh lentils into the bowl. Add any additional liquid to the 'maximum' marking on the bowl. Place varoma on top. Cook 20 mins/varoma/"Counter-clockwise operation" /speed 3.
Ensure chicken is cooked. Remove varoma and set aside or place chicken and voodlees in a Thermoserver to keep warm.
Tip sauce into a round Thermoserver. Add 100-200g cold liquid to the bowl and 1 sec/turbo. Tip this into the sauce in the Thermoserver and stir gently with spatula to combine (if you want the sauce thicker, leave this step out). Do not overfill Thermoserver.
Serve by spooning sauce into a bowl and toppong with voodles, then chicken (if using).

This meal is vegan (omit chicken), grain and dairy free.
The quanties of vegetables in this recipe are a guide as each vegetable weight will vary. The aim is to use the aromatics and herb base, and add a variety of colourful vegetables to fill the bowl. I successfully cooked 2.2L of sauce (using slighly more vegetable weights than stated), however be careful not to overfill the bowl.
Sometimes eating some of the darker green and colourful vegetables is hard! Here I have attempted to put together a nutricious, flavoursome and fun all-in-one meal that kids can help prepare. A great meal for after market shopping using all fresh ingredients. The sauce is also not tomato based for a those families looking for variety.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
