Ingredients

SMOKY CHILI BEANS

  • 400 grams KIDNEY BEANS, canned
  • 400 grams Black Beans, canned
  • 1-2 Dried Dmoked Chillies (Ancho), (depending how hot you like it)
  • 1 cup boiling water
  • 2 tsp cumin seeds
  • 1/2 tsp coriander seeds
  • 30 grams olive oil
  • 1 onion, cut in quarters
  • 3 cloves garlic
  • 1 tbsp oregano leaves
  • 1 red chilli
  • 800 grams tomatoes, chopped
  • 1 tsp Molassas
  • grams dark chocolate, (optional)
  • 1 tsp salt
  • 1/2 tsp ground black pepper

Recipe's preparation

  1. Remove stems from smoked dried chillis and discard. Cover chilis with boiling water and soak 30 minutes until tender.

  2. Dry roast cumin and coriander seeds in Thermomix 2min/ 120 C/speed 1 . Allow to cool slightly, then insert measuring cup and mill 15 sec/speed 8 . Set aside.

  3. Place onions and garlic in Thermomix. Chop 3 sec/speed 7. Scrape down sides of bowl with spatula. Add olive oil and saute 5min /120 C/ speed 1.

  4. Add crushed seeds, oregano, fresh chilli, tomatoes, molassas, chocolate, salt and pepper and cook 10min/100 C/speed 1.

  5. Lift smoked chillis out of their soaking liquid, reserving the liquid. Chop finely and add to the tomato sauce with the soaking liquid and the drained cooked beans. Cook 30min/100 C/ Counter-clockwise operation"Counter-clockwise operation" speed 1.

  6. To serve, adjust seasonings to taste, top with fresh coriander.

Tip

You can subsitute dried beans for canned although you will need to allow time to soak and cook them beforehand.

If you do not have smoked ancho chillis, you can subsitute 2tsp pureed chipotle chillies in adobo sauce instead - they won't need to be soaked so just add to the tomaot sauce with up to two extra cups of water.

You can substitute sugar for the Molassas.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
