Ingredients
Dressing
- 2 cm piece fresh ginger
- 6 sprigs fresh mint, leaves only
- 6 sprigs fresh coriander, roots and stalks (leaves reserved for garnishing)
- 40 g rice wine vinegar
- 40 g Pure Maple Syrup
- 40 g tamari
- 1 tbsp tahini
- 40 g extra virgin olive oil
- 2 tsp miso paste
- 2 tsp sesame oil
- 200 g extra firm tofu, cut into pieces (1 cm thick x 2-3 cm length)
Salad
- 1600 g water
- 200 g frozen edamame beans
- 200 g dried soba nooodles
- 1 carrot (approx. 100 g), cut into matchsticks
- 1 fresh Lebanese cucumber (approx. 100 g), cut into halves length ways, deseeded and thinly sliced
- 2 spring onions/shallots, trimmed and cut into thin slices
- 80 g snow peas, cut into thin slices
- 1 fresh chilli, cut into slices

- Place all ingredients, except tofu, into mixing bowl and mix 5 sec/speed 9.
- Scrape down sides of mixing bowl with spatula and mix 10 sec/speed 4.
- Transfer dressing into a large bowl, add sliced tofu and stir to combine. Set aside. Rinse mixing bowl.
- Place water into mixing bowl, place Varoma dish into position and weigh edamame beans into it. Secure Varoma lid and cook 12 min/Varoma/speed 1. Remove Varoma and stir edamame.
- Add soba noodles into mixing bowl, place Varoma back into position and cook 3 min/100°C/"Counter-clockwise operation" /speed 1. Transfer edamame into a bowl and set aside to cool. Once cooled, remove beans from pods and discard pods. Set beans aside.
- Transfer noodles into Varoma dish and rinse under cold water to cease cooking. Set aside to drain.
- Transfer noodles into large bowl with dressing and tofu and stir to combine.
- Divide noodles between serving bowls, top with remaining ingredients and garnish with coriander leaves. Serve immediately.

You can find edamame in the frozen section of most supermarkets, and the soba noodles in the Asian food aisle.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
