Summer Risotto
- 900 g Vegetable Liquid Stock
- 125 g white wine, or use extra stock
- 1 --- onion, Peeled and cut into 4
- 1 cloves garlic, Peeled
- 1 tbsp olive oil
- 25 g Butter
- 100 g Capsicum, Deseeded and sliced
- 1 --- Large carrot, Peeled and cut into pieces
- 2 tbsp tomato paste
- 25 g Parmesan cheese, cubed

- Add 25g Parmesan
- grate 10 seconds speed 9 and set a slide
- Clean and dry bowl
- Add 1 Garlic Clove and 1 onion peeled and cut into 4
- Chop 3 seconds speed 5
- Add 1 tbsp Olive Oil, 25g Butter
- cook 3 mins/120°C/speed 1
- Add 200g Risotto Rice, add 125g White Wine if using
- Cook 4 minutes/Veroma/Speed 1 transfer to small bowl and set aside - no need to clean the bowl
- add 1 large Carrot peeled and cut into pieces and 100g Capsicum deseeded and cut into slices
- Depending on how small you would like it chopped reduce speed as needed.
Chop 5 seconds speed 5 repeat if necessary for smaller pieces - add rice from earlier into bowl and add Stock and Tomato Paste, cook 12 min/100°C/ "Counter-clockwise operation" /speed 1
- Transfer to Thermomserver and stir through parmesan with spatula. leave to thicken for 5-10 mins and enjoy
