Base

  • 1 sheets Puff pastry

Filling

  • 1 brown onion, peeled, halved
  • 6 cloves garlic, peeled
  • 1 red capsicum, roughly chopped
  • 30 grams olive oil
  • 250 grams Tasty cheese, cubed
  • 2 eggs
  • 250 grams frozen spinach leaves, chopped
  • 500 grams cottage cheese

topping

  • 700 grams white potatoes, peeled, chopped small
  • 700 grams water
  • 30 grams Butter, cubed
  • 30 grams cream
  • 1 teaspoons salt

Recipe's preparation

    Method
  1. 1. Preheat oven to 200deg

    2. Place sheet of pastry in lasagne dish and bake in oven 15-20 mins (until golden). Allow to cool.

    3.Add cheese to mixer bowl. Chop 5 sec/speed 6/MC on. put aside (reserve desired amount for topping)

    4. Add garlic and onion. Chop 3 sec/speed 6/MC on.

    5. Add capsicum to mixer bowl. Chop 3 sec/speed 4/MC on. Scrape mixer bowl down.

    6. Add oil to mixer bowl and cook 5 mins/100deg/speed 1/MC off.

    7. Transfer to a small bowl and allow to cool.

    8. Add both cheeses, eggs and spinach to mixer bowl. Mix 8 sec/speed 3.

    9. Return onion, garlic and capsicum to bowl. Mix 10 sec/speed 3/MC on

    10. Pour mixture over cooled pastry base. Rinse mixer bowl.

    11. Add water to mixer bowl.

    12. Put deep steaming tray in place and add potatoes, Cook for 20 min/steaming temp/ speed 3.

    13. Discard water.

    14. Add potatoes, butter, cream and salt to mixer bowl. Mash 3-4 sec/speed 4/MC on. Repeat if required.

    15. Top vegetable filling with mash and add reserved cheese.

    Bake in ovenfor 30 min or until golden.

Tip

Allow to cool for 20 minutes before serving.
