Ingredients

  • 500 g broccoli florets
  • 400 g sweet potato, sliced
  • 200 g peas
  • 3 cloves garlic
  • 2 onions (medium), quartered
  • 400 g coconut milk
  • 500 g water
  • 3 cm ginger fresh
  • 1 tablespoon TM stock concentrate
  • 30 g coconut oil or butter, cut into chunks
  • 1 lemon, for Peel and Juice
  • 10 g curry powder
  • to taste Salt and pepper

Recipe's preparation

  1. Place onion, ginger and garlic into TM bowl. Chop 5 secs, spd 5

  2. Add oil or butter and curry powder and saute 3 mins 100 degrees spd 1. 

    Tip - loosen paste from base of bowl with spatula to ensure paste mixes and doesnt burn.

  3. Add coconut milk, TM stock and water and season with 3 strips lemon rind. Put lid in place and close.

  4. Place broccoli, sweet potato and peas in Varoma dish. Put Varoma in place on top of bowl.

  5. Cook for 15minutes, Varoma temp spd 1-2.

  6. Season with salt pepper and lemon juice and serve as a main meal or side dish.

    Unfortunately I didn't adjust the water and too thin for our liking. Ended up throwing rice in with the sauce and making it like a risotto!

    Yummy recipe. Reduced the water to 250 ml and steamed rice. Great flavour - worth playing around with it to get it right

    Such a bad recipe - I regret not reading the comments. Sweet potato was practically raw and the sauce was way too watery.

    Also, why are people giving it 5 stars when they admit the recipe wasn't very good and/or had to make alterations?

    This recipe has a good heart but the instructions make it almost unusable. I even read through the comments and added rice. I had to add time because the Rice and vege were not done then they were over done and there was little sauce for the curry. I don't understand how it's got such a high rating.

    Very easy and tasty. Glad I read comments first about it being watery. Only used about 250 of water and put rice in steaming basket. Used pumpkin instead of sweet potato and red capsicum. Also steamed some tofu with the veg and it's yummy 😋

    Very nice thanks. I used 150ml water as per other comments stating that it was too runny with 500ml water and added diced carrots into the varoma dish with other vege. I needed to cook vege for 20mins and they were diced with broc being small pieces - 15mins would have been raw!!! Tasted awesome!

    This was delicious!! Luckily I read the comments below first to add rice in the basket with the sauce. I added 1.5 cups rice and topped up with a bit more water from the coconut cream can. I accidentally poured three times the required curry powder but it just gave it more of a kick which we love. Next time I won't add the lemon zest as my daughter didn't like that bit (but I did), will add lemon juice though. For the veges I just added whatever I had: pumpkin, sweet potato, broccoli stalks, peas, carrots. Very yummy and very satisfying! thanks for sharing. I would recommend editing this to add the rice! Thanks
