These are super yummy! Made a few additions for personal taste, but would be perfectly tasty as recipe is written. Thanks for sharing.

Want to make these today, can you give me an estimate on zucchini size? Length, width or grams?

These turned out great. We used home grown zucchini from the garden. We had the fritters in wraps with spinach, tomato and chutney. So good to find a recipe that doesn't need eggs.

Made these today but have only cooked half and left other half in fridge to cook in two days. They were delicious. Love the freshness of the herbs and lemon zest. A little salty for my taste.

I am going to make these tomorrow, would they be freezer friendly?

That's awesome, biunderscoreanca! Thanks for the feedback. The greekvegan website has some goodies on there and worth converting to thermo (and possibly GF). Glad you loved it as much as we did. Double batch is a great idea as ours didn't last very long on the table either, omnivores and herbivores alike devoured them in a flash. Definitely worth the effort.
