Ingredients

Sauce

  • 1 onion, Halved
  • 2 cloves garlic, Peeled
  • 5 slices shortcut bacon, Roughly Chopped
  • 2 stalks Celery, Roughly Chopped
  • 1 heaped tablespoon coconut oil or butter
  • 800 g tin diced tomatoes
  • 1 zucchini, Roughly Chopped
  • 1 carrot, Roughly Chopped
  • 125g can four bean mix
  • 60 g Baby Spinach Leaves
  • 80 g tomato paste
  • 1-2 tablespoons vegetable stock concentrate, To taste
  • 1 MC of water

Recipe's preparation

  1. 1. Put onion, garlic, bacon and celery into the bowl and chop on 6 for 10 seconds.


    2. Add oil or butter and cook on 100deg for 5 min, speed 2.


    3. Add the rest of the ingredients and cook at varoma, speed 2 for 20 mins.


    4. Turn the dial slowly up to speed six and after 25 seconds, turn it off.


    5. You can add more water or blitz it more if you prefer it thinner or more smooth. 


    6. Serve over cooked pasta - I used dinosaur pasta from Coles for my fussy toddler! 

Tip

I used a 500g bag of pasta and it made more than enough for two adults and a toddler for two dinners and lunch. Perfect to use up veggies that are on their way out!  Make up a batch and throw it in the freezer for a super easy meal when you can't be bothered doing much cooking tmrc_emoticons.)

    Love this recipe. And so do the fam. Change it up a bit as I don’t add 3 bean mix but add other veggies instead. Also add a couple of spoonfuls of sour cream when string through cooked pasta to make it a creamy tomato based sauce. A winner!

    Holy moly this is bursting with flavor and so much better than some pastas I’ve paid for when eaten out!! Didn’t change anything. Love how it makes loads. Will become a staple in our household.

    Made this again today, without the coconut oil, and with olive oil instead. Soooooo much better. Whole family agreed. I also added in 2 x portobello mushrooms and half a red capsicum, and some basil, and poured it on top of some homemade spiral pasta....delish!

    Quick, easy and yummy! I had everything on hand and also added in a few broccolli florets. Makes plenty of sauce. Next time I will experiment and use mushrooms and capsicum too. The coconut oil was so overpowering though, next time I will use olive oil.

    Lovely pasta sauce that goes far. Fed three adults, leftovers for lunch for us all and more sauce left for another time! Will tweak flavours more and experiment too.

    Have been making this for my kids since I got my thermie - best pasta sauce I've tried. Always have a batch frozen to add for last minute dinners - kids devour it every.single.time.
