Ingredients

Salad Ingredients

  • 1/2 bunch parsley
  • 1 Spanish onion or, 1/2 Red Onion
  • 250 g brown rice
  • 1200 g water
  • 300 g chicken breast, diced into 2cm cubes
  • 100 g green beans, chopped
  • 1 can 4 bean mix, rinsed
  • 12 cherry tomatoes, halved

Dressing

  • 4 tbsp olive oil
  • 3 tbsp white wine vinegar
  • 1 tbsp wholegrain mustard
  • Salt and pepper, to taste

Recipe's preparation

    Preparing the Salad
  1. Place the parsley and onion into thermomix bowl and chop for 5 seconds speed 7.

     

    Set aside the chopped parsley and onion into a mixing bowl, scraping out as much as possible with the spatula.

     

    Without rinsing the bowl, place the basket into the thermomix bowl and add rice.

     

    Pour water over rice and stir with the spatula.

     

    Place lid into position and sit the varoma on top.

     

    Add the chicken breast into the bottom section of the Varoma, sit the Varoma tray on top and add green beans. Place lid into position.

     

    Cook rice for 20 minutes, Varoma temp, speed 4.

     

    After cooking time, remove chicken and beans and set aside to cool.

     

    Place measuring cup onto lid and cook rice a further 10-15 minutes, or until cooked.

     

    Run rice under cold water to stop the cooking process. Allow to drain for a few minutes and add into mixing bowl with onion and parsley.

     

    Add the cherry tomatoes, diced chicken, green beans, tinned beans and dressing ingredients and mix thoroughly.

     

    Serve as a side salad or eat as a main dish on its own.

Tip

Use 200g feta broken into pieces in place of chicken.

For a vegetarian version, omit the chicken.

    Really enjoyed this meal. We don't usually eat brown rice but we felt very healthy eating this and we enjoyed the flavours. The recipe was easy to follow and it was an easy mid-week meal. I used chicken thighs. Thanks for sharing.

    Really yummy. Makes a huge amount! I shredded the chicken, personal preference. Will definitely make again.
