Ingredients

  • 500 g pre cooked chicken breast, Sliced
  • 300 g white wine
  • 1 carrot, Chopped
  • 1 red capsicum, sliced
  • 1 Spanish onion, sliced
  • 300 g arborio rice
  • 400 g tomato passata, or tinned chopped tomatoes
  • 1 tbsp vegetable stock concentrate
  • 100 g water
  • 100 g grated cheese, Optional (Parmesan works well)

Recipe's preparation

  1. Chop carrot at speed 8 for 7 secs.


  2. place remainder of ingredients in bowl and cook for 17 mins on slow speed at 100 degrees.


  3. Rest in server for 10 minutes before serving. Stir though cheese if desired.

  4. add salt and pepper to taste


    you could also add other vegatable (pumpkin, peas etc) - just make sure you adjust your cooking time to suit.

Tip

Try different sausages to suit your tastes.

    Surprising delicious. I omitted the onion to make it FODMAP friendly and added roasted pumpkin and silverbeet. The capsicums were also roasted making them very sweet. Thanks for he recipe. Very enjoyable.

    Tried this recipe without capsicum as I didn't have it. Very simple easy quick meal to prepare and cook. No skill required. Tasty dish although would serve with a side of vegetables. This meal would be great stuffed and baked in capsicum
