Recipe's preparation

  1. Mix 100g of flour with the kale leaves 20 seconds speed 10.

  2. Add remaining flour and eggs and knead 2 minutes/Closed lid"Closed lid" /Dough mode"Dough mode" .

  3. Wrap in plastic wrap and let the dough rest 30 minutes in the fridge.

  4. Roll out the dough, first with a rolling pin then with a pasta machine using a little bit of flour to prevent the dough from sticking.

    Shape into sheets for lasagna, ravioli, tagliatelle or ang shape desired.

    Cook straight away in salted boiling water for 3 minutes or let the pastas dry for an hour and then keep refregirated until needed.

    This is now my go-to pasta recipe, its incredibly versatile! I've made it with kale but have also substituted fresh silverbeet, fresh beetroot greens and leaf spinach - a winner each time. Also I use 50% spelt or wholewheat flour (happened by accident, I ran out of pasta flour making one batch); it would probably be also fine at 100% alternate flour. However I make it, my 2 year old eats it with gusto so I'm making a batch a week at the moment! Great with pesto and/or a cheese sauce.

    As a practical note, I usually weigh 100g of dry fresh greens, then I wash and dry them before putting in the mixing jug. Also at the end of kneading I then add another 50g of flour and knead an additional 1 minute if the dough looks sticky (depends on the water content of the veg).

    Maybe the kale didn't have as much water in it, it doesn't really have to look like breadcrumb as long as the kale and the flour are well mixed.

    I tried this and had to add 50g oil.  Before that it was like dry breadcrumbs?

    Did I do something wrong?

    I made this today, is really yum.. 18 month old is devouring it right now.. so pleased she loves it.. was wondering how to get some kale in her and it has done the trick!! Thank you!!

    I made this using baby kale leaves, I'm not sure if that makes much of a difference, but enjoyed eating it. I don't have a pasta rolling machine, so my strands for my fettucine were a bit thick. Will make again and try my friend's pasta roller.
