Ingredients

  • 8 --- hotdogs
  • 330 g water
  • 1 tablespoon honey
  • 1 tablespoon Yeast
  • 2 teaspoon salt
  • 620 g flour
  • 60 g Lard or butter
  • 100 g baking soda/bicarb

egg wash

  • 1 egg yolk
  • 2 tablespoon Milk

Topping

  • 1 tablespoon maldon salt

Recipe's preparation

    Dough
  1. Pour water, honey and yeast in tm bowl. Mix 30sec, sp 2, 37 degree.

    Allow to sit for 5 min.

    Add the flour, salt and lard ( or butter) close the lid, knead for 3min.

    Place the dough in an oiled bowl and cover it. Let it rest for about 50 min until the dough has doubled.

     

  2. Once the dough has doubled, turn the oven on 200 degree C.

    Pour 1.5L of water in the tm bowl with the baking soda,set the timer to 60min, sp2, 90 degree.

    While the water is heating up cut the hot dogs in half.

    Divide the dough in 16 equal pieces (about 60g)

     Roll into 25cm ropes and wrap the hot dogs, pressing on the ends to seal the pretzel dogs.

  3. Place the basket in the tm bowl, set the temperature to 100 degree.

    Place the pretzel dogs 2 by 2 in the basket and poach for 30-50 seconds speed 3. Transfer to a cooling rack to dry them while you are poaching the rest.

  4. Place the pretzel dogs on an oven tray with baking paper.

    Brush with the egg yolk mixed with the milk, sprinkle with salt.

    Bake for about 12-15 min, keep an eye on the they do brown pretty quickly.

  5. Let them cool down at least 5 min before eating.

Tip

I like to sprinkle them with sesame seeds or rosemary sometimes.

Makes nice rolls, divide in 100g balls, poache like the pretzel dogs in baking soda and water. Can be use for burgers or simple dinner prezel rolls.

I always have some egg wash left so I freeze it in an ice cube tray and then transer into a small container for later use.
