Ingredients
- 300 grams risotto rice
- 1 onion, halved
- 2 clove garlic
- 250 grams free range chicken breasts
- 760 grams filtered water
- 30 grams cold pressed olive oil
- 70 grams white wine
- 50 grams approx lemon juice of two lemons
- 2 tbsp lemon rind
- 2 tbsp veg stock
- 1 tsp salt
- 2 bunches parsley or spinach

Place garlic, lemon rind and onion in mixing bowl and chop 5 sec/speed 5.
2. Scrap down the sides. Add olive oil and saute for 2 mins/100C/speed 1
3. Add rice and wine and toast for 2 mins/100C/speed 1"No counter-clockwise operation"
4. Add water, stock, chicken, and lemon juice and cook for 18 min/100C/ "Counter-clockwise operation" /speed 2.
5. Place parsley (or spinach if preferred) in the base of the Thermoserver and pour in Risotto. Let sit for a few minutes prior to serving.
6. Serve with Parmesan cheese or without if diary intolerant.
Tip
To save time or use leftovers use pre cooked chicken and lower cooking time to 16 minutes.
Risotto works fine for 200 - 300 grams of chicken.

This was delicious. You didn’t specify so I peeled the rind and chopped it a few turns with the onion and garlic. It stayed quite chunky but wasn’t noticeable except for the flavour at the end, so all good.. I added more water as 760ml didn’t seem much. About 3/4 cup, turned out great. I added mushrooms 10 mins from end too.

Thank you for this lovely meal. I did change it a little - reduced the water and added more lemon juice as I wanted a strong lemon flavour. I added left over roast chicken and needed to reduce the time to 15 minutes and the speed to spoon so the chicken stayed intact. I then put in thermosever for 10 minutes. YUM YUM. Will have again.

Hello It's me again just wanted to let you know that your risotto was divine. It didn't look so appealing but was really tastie.
I added chilli and it gave it a little edge to it
There was heaps of left ovas so my partner took it for Lunch
