Ingredients

Meagan's Chunky Bolognese

  • 1 brown onion, halved
  • 2 cloves garlic
  • 1 zucchini, chopped in pieces
  • 1 carrot, chopped in pieces
  • 5 button mushrooms (optional)
  • 20 g olive oil
  • 1.5 tbsp dried italian herbs
  • 100 g red wine
  • 50 g tomato paste
  • 20 g Worcestershire sauce
  • 2 pinches ground pepper
  • 2 tbsp Vegetable stock paste
  • 2 cans chopped tomatoes
  • 700 g Beef mince

Recipe's preparation

  1. Place onion, garlic, zucchini, carrot, mushrooms into mixing bowl and chop 3 sec/speed 6.
    Scrape down sides of mixing bowl with spatula.

  2. Add oil and cook 5 min/100°C/speed 2, without measuring cup.

  3. Add Italian mixed herbs and red wine and cook 5 min/100°C/speed 2, without measuring cup.

  4. Add chopped tomatoes, tomato paste, Worcestershire sauce, vegetable stock paste, and black pepper. Insert simmering basket into mixing bowl, weigh mince into it and cook 15 min/Varoma/speed 2.

  5. Stir mince with spatula to break up and ensure even cooking, then cook for a further 15-20 min/Varoma/speed 2 or until cooked through.

  6. Carefully transfer mince into bowl with sauce (without splashing!) and stir to combine 20 sec/speed 3.5, then serve as desired.

Tip

You can sub the canned tomatoes for a 700g jar passata.

I use whatever veg I have on hand - carrots, zucchini, capsicum, mushrooms, celery
