Ingredients
Sauce
- 6 level tbsp soy sauce or tamari
- 2 level tbsp Peanut Butter
- 6 level tbsp Pure Maple Syrup
- 2 cloves garlic, Peeled
- 1 level teaspoons Sriracha sauce
- 2 level teaspoons sesame oil
Vegetables
- 1 --- Medium green capsicum, Roughly chopped
- 1 --- medium red capsicum, Roughly chopped
- 1 --- Large carrot, Peeled and roughly chopped
- 1 --- spring onion/shallot, Or small brown onion, peeled and roughly chopped
- 1 --- Cup frozen peas and corn
- 4 clove Garlic, peeled & chopped
- 1 level teaspoons sesame oil
Rice
- 400 g Medium or long grain rice, Thoroughly rinsed
- 20 g Olive Oil or Butter
- 1 level teaspoons salt
- 1000 g water

- Add all Sauce ingredients to bowl and blitz for 7 seconds speed 7. Set aside in a small bowl. Give thermo bowl quick rinse without wetting the base.
- weigh rice into simmering basket and rinse well. Set aside. Add water, olive oil & salt to thermomix bowl. Put simmering basket into the bowl. Give rice a mix. Add lid and cook for 20 minutes, speed 4, 100deg. Pause at halfway and give rice a quick stir. Once finished Empty rice out into a large bowl.
- Put a large pot or very large fry pan on medium heat. Add 1 tsp oil and all the veggies & garlic, cook stirring often for around 4 minutes until veggies have softened. Then add the cooked rice and the sauce. Cook for another 3 minutes stirring occasionally until all combined. Serve.

Tip
You can experiment with veggies. I normally use whatever I have on hand. E.g zucchini, mushrooms, broccoli, cauliflower (chopped very small) Taste and adjust flavor as needed, adding more soy for saltiness, peanut butter for creaminess, maple syrup for sweetness, or sriracha sauce for heat.
Crushed salted, roasted peanuts or cashews make a lovely additional garnish. Leftovers keep well in the refrigerator for 3-4 days.
