Ingredients
Seasoning
- 1 tbsp oyster sauce or gluten free oyster sauce
- 1 tbsp Hoisen Sauce
- 1 teaspoon light soy sauce
- 1 teaspoon dark soy sauce
- dash white pepper to taste
- 1 teaspoon sesame oil
Ingredients
- 1 centimetre ginger
- 3-4 cloves garlic
- 5ml chilli oil, or olive oil
- 1 carrot, sliced
- 300 g Vegetable to chicken stock
- 150 g Rice Vermicelli Noodles, soaked in water for 20 minutes or until soft
- 100 g cabbage, sliced
- 1 Celery stick, sliced
- 1 Yellow or red capsicum, sliced
- 80 g mushrooms, sliced, optional
- 80 g Beans
- 200 g Prawns Fresh or frozen, if frozen then defrost
- handful snow peas

Combine all seasoning together in a bowl. set aside
- 1. Place garlic and ginger into TM Bowl to chop. 6 sec/ speed 6.
2. Scrape down the garlic and ginger. Add chilli oil to saute. 3 min/V/R/Speed "Gentle stir setting"
3. Add all vegetables (except the snow pea's) to fry. 3 min/V/"Counter-clockwise operation" /speed 1.
4. Once Bee Hoon noodles are soft. Drain with TM sieve.
5. Add seasoning, stock or water, drained Bee Hoon noodles to TM Bowl. Fry while using spatula to stir. 3-4min/V/"Counter-clockwise operation" /"Gentle stir setting"
6.Add prawns and snow pea's to cook. 2-3min/V/"Counter-clockwise operation" /"Gentle stir setting" .
Serve.

Tip
Thickness of noodles will depend on cooking time. Thin noodles will cook in 3 minutes and thicker 4 minutes.
The longer you soak it the softer it will become.
Don't over cook the noodles or they will break up.
For a vegetarian version remove prawns and oyster sauce and add increase soy sauces to 1 tbsp.

Comments
The taste was really good and it was relatively easy, however it looked like such a mess. Everything ended up chopped into little pieces, including the noodles. I had to eat it more like a soup than a noodle dish. How do you avoid this? Also, why do you add so much stock when it should be a "fried" dish? Should the stock be added hot or cold? Thanks in advance for your response.
It would also be helpful to mention the number of serves in a recipe. I think you could stretch this to 2 people (small-ish serves).
The recipe asks for chilli oil, in step 2, however there is no mention of oil in the ingredients or qty. There is also too much noodles for the recipe and next time I would add the prawns and then the noodles.
