Ingredients

  • 50 g parmesan cheese cubed
  • 1/2 medium onion
  • 1 clove garlic
  • handful of parsley
  • 50 g olive oil
  • 2 Chorizo sausage (about 240g) cut length ways then sliced
  • 400 g arborio rice
  • 2 tbsp TM Veg Stock Concentrate
  • 1000 g water (or whatever takes you to the fill line)
  • 300 g raw prawns de-tailed & cut in half
  • 15 snow peas stalks removed & cut in half
  • 100 g white wine

Recipe's preparation

    Method
  1. Place the parmesan into TM bowl & pulverise for 10 secon Speed 9. Set aside.

  2. Place onion, garlic & parsley & chop for 3 sec on speed 6-7.

  3. Add oil & chorizo & saute for 2 mins at 100oC on Reverse Counter-clockwise operation"Counter-clockwise operation" + speed 1 with MC off.

  4. Insert Butterfly. Add rice & wine into bowl & saute for 2 mins at 100oC on Reverse Counter-clockwise operation"Counter-clockwise operation"  + speed soft.

  5. Add stock & water (make sure you only fill upto the fill line on the TM bowl!) and cook for 15 mins at 100oC on Reverse Counter-clockwise operation"Counter-clockwise operation"  + speed soft.

  6. Add in prawns and cook for a futher 2 mins At 100oC on Reverse Counter-clockwise operation"Counter-clockwise operation"  + speed soft.

  7. Pour into Thermoserver and stir through parmesan. Place snow peas lightly on top of the risotto and place on thermoserver lid. Allow to rest for around 10 mins. This allows the prawns to finish cooking.

Tip

You may like to throw a good couple of handfulls of spinach leaves in the bottom of the thermoserver before you pour in the risotto then stir before serving and omit the snow peas or have both - yum! Left overs for lunch the next day are yummy!

    This is my favourite Risotto. I make it frequently. Sometimes I might add a few mushrooms. So easy. Thanks for a great recipe!

    I cut the prawns (they were large prawns) and the snow peas into 3 so that they were bite size pieces. I also added 2 birds eye chillies when I diced the onion and garlic. I took the risotto off the Thermo after cooking it for the 15 minutes and added the prawns. I didn’t cook for the further 2 mins as the prawns were much smaller and the heat cooked them anyway. I mixed through the Parmesan with the prawns in the Thermomix because I placed the spinach into the Thermoserver and didn’t want to combine it all until after it had been sitting for the 10 mins

    A yummy quick meal, I added lots of spinach & red capsicum at the same time as the stock. Could easily add tomatoes or some chili for a kick. Great risotto with no cream.  tmrc_emoticons.)

    Not that I know of, just something I put together one night, it's a basic risotto recipe that you can add what ever you like to, but thought I would share it with times of cooking for new thermo users tmrc_emoticons.;)

    What a winner! Fabulous dinner added some lemon juice at serving. We raved about it all night. Definitely our favourite rissotto.
