- 1 tablespoon olive oil
- 1 tablespoon bottle of passata sauce
- 1 cube Vegetable or chicken stock
- 1 teaspoons brown sugar
- 1 level tablespoon salt
- 10 pieces black olives pitted
to top it off
- Parmesan cheese
- fresh basil

I'm cooking this todayRecipe's preparation
- Put onion, olives and garlic into mixing bowl and chop on Speed 7 for 3 seconds. Scrape down sides. Add oil and sauté for 1 min, Varoma, Speed 2.
Add tomato passata from the jar, salt, stock, and sugar for 30 minutes/100/reverse"Gentle stir setting" .
The sauce should not be runny, you can cook for longer to thicken.
You can add more olives, salt or pepper to taste at the preparation stage if you so wish.
Serve over your favourite pasta. Add fresh basil leaves and or parmesan cheese to suit your taste.
The sicilian tomato pasta sauce
Tip
i use bottled passata fiamella with either basil added or plain tomato. when you add the tomato to the bowl, use a little water to wash the inside of the bottle and put this into the bowl too.
If you have made more than you need, place in fridge in the bottle. or you can freeze if placed in the correct container.
this recipe is liked even by those who dont like olives!!! it is amazing.
