  • 20 grams Parmesan cheese, Roughly chopped
  • 1 tablespoon olive oil
  • 1 brown onion, peeled, halved
  • 1 fennel bulb, Trimmed, roughly chopped
  • 2 clove garlic
  • 1 teaspoon lemon rind, Finely grated
  • 1/2 teaspoon chilli flakes
  • 200 grams Aborio Rice, Dry
  • 1 tablespoon Vegetable stock paste
  • 375 grams water
  • 400 grams can Chopped Tomatoes
  • 400 grams Raw Prawn Meat, Thawed
  • 50 grams rocket leaves, Shredded

Recipe's preparation

    Parmesan Cheese
  1. Grate parmesan cheese for 20 sec / Speed 10.

    Set aside

  2. Risotto
  3. Add onion and fennel, chop 3 Sec / Speed 5

    Scrape down sides of mixing bowl with spatula.

  4. Add oil and sauté for 3 mins / 100 deg / reverse / Speed 1 with the MC off.

    Scrape down sides of mixing bowl with spatula.

  5. Add rice, chlii flakes, and lemon rind, mix for 30 sec / 100 deg / reverse / Speed 1 or until combined.

  6. Add stock paste, water and tomatoes and cook for 10 mins / 100 deg / reverse / Speed 1 with the MC off, and simmering basket on top of the mixing bowl lid to contain any splatters.

  7. Add prawns using spatula to submerge and cook 3 mins / 100 deg / reverse / Speed 1 with the MC off, and simmering basket on.

  8. Pour into ThermoServer and stir through parmesan and rocket leaves. Rest for 5 minutes. Serve.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
