Passionfruit curd

  • 120 g Butter
  • 150 g raw sugar
  • 180 g passionfruit pulp, 8-10 small passionfruit
  • 4 egg yolks
  • 30 g lemon juice, 1 medium lemon

Recipe's preparation

    passionfruit curd
  1. Place all ingredients in TM bowl and cook for 12 minutes at 80C on speed 3.

    Pour into sterilised jars.

Tip

This is delicious spread on toast or waffles or you could use it to make a tart. It's also a great filling for macarons or melting moments.

It makes about 400mL. I haven't tried doubling the recipe yet but I think it would be fine.

Sterilise glass jars by heating clean jars and lids in an oven at 120C for about 10 minutes immediately before filling.

Store in the fridge.

    I actually cooked it for an additional 4 minutes, cos it didn't thicken and the consistency wasn't quite right

    Absolutely Delicious!

    I had made some butter in the morning and had picked up some passionfruit at the local greengrocer so was excited to find this recipe.
    Unfortunately I had to go back and buy more passionfruit to get enough pulp (I had to use 17 passionfruit! 😱).
    Had no lemon so used lime...SOOOO Goid!

    Thank you Karen for the most delicious spread, topping etc......I used up all the passionfruit after eating them off the vine and thought 'what can I do with the rest'....voila ! i'll be making this every year now !!!

    i cooked it a minute or two longer than the the recipe because my butter was really cold, great result - super yummy recipe thanks.
