Ingredients

Hoisin Sauce

  • 40g peanuts, roasted
  • 25g honey
  • 10g Wine Vinegar, ... or rice wine
  • 10g sesame oil
  • 1 garlic clove
  • 1tspn five spice, ;
  • 1 to taste pepper, ground

The Sauce

  • 500g onion
  • 500g plums
  • 50g ginger, glacé, .... paste or powder (it's your recipe)
  • 250g sugar raw
  • 200mls apple cider vinegar
  • 10g mustard powder, can add seeds with peanuts in first step

Recipe's preparation

    Hoisin Sauce
  1. Add peanuts and garlic; Turbo 6 to 8 times, or until the peanuts are chopped into very small pieces.

    Process on Speed 5 for 2 to 3 minutes until the peanut butter is shiny and smooth.

    Add honey on Speed 5 until combined.

    Add all other ingredients and mix until you are happy with the consistency.
  2. THE SAUCE!
  3. Add onions, then plums then all other ingredients.

    Counter-clockwise operation"Counter-clockwise operation" 2.5/3 on 100 temp for 30 minutes (once at 100 degrees I turned down to 95)

Tip

If you already have hoisin sauce skip the first step above; however it tastes amazing from scratch; and remember to make your own 5 Spice - I've got a simple recipe for that, too!

Substitute red plums and red onion for a deeper colour. I have a plum tree and surplus brown onions.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
