cauliflower rice pilaf

  • 1/2 onion
  • 1 garlic clove
  • 1 tablespoon coconut oil
  • 1 cauliflower head, florets
  • 8 --- dried apricots
  • 30 g pine nuts
  • 20 g raisons
  • 1/2 tsp cumin ground
  • 1/2 tsp cinnamon ground

Recipe's preparation

    cauliflower rice pilaf
  1. Place 400g florets of cauliflower in TM bowl. Chop on sp4Counter-clockwise operation"Counter-clockwise operation" /4sec. set aside. Check that it looks like grains of rice. rpt with remaining cauliflower.

  2. Into clean dry bowl chop onion and garlic sp7/3sec.Scrape down sides and then add coconut oil and cook for 3min/varoma/sp1. Add apricots and chop for 7sec/sp7.  Add raisons, pinenuts, cumin and cinnamon cook for 4min/varoma/sp1. Insert butterfly. Add cauliflower rice and cook 4min/100degrees/Gentle stir setting"Gentle stir setting" . serve

    This was a lovely dish. I added some coconut milk to the last step when cooking the cauli to add some flavour to the dish. Easy, healthy and went beautifully with my chicken curry.

    This is sensational and absolutely fabulous for those of us who try not to eat too many carbs.  It needs salt and I also added some chopped spring onions (shallots) at the end and heated the whole thing up in the microwave after cooking it.  It really was quite delicious.
