Ingredients

tamari almonds

  • almonds, 1/2 cup
  • pepitas, 1/2 cup
  • 1 tablespoons tamari
  • 1/2 teaspoons Pure Maple Syrup
  • 1/2 teaspoons smoked paprika

Broccoli Salad

  • 1 cloves garlic
  • 45 grams extra virgin olive oil
  • 25 grams apple cider vinegar
  • 100 grams mayonnaise
  • 2 teaspoons Dijon mustard
  • 5 grams Pure Maple Syrup
  • 1/2 teaspoons sea salt flake
  • 50 grams red onion, about 1/2 onion
  • 500 grams broccoli florets, about 1 head of broccoli
  • 75 grams dried cranberries
  • 1 cucumber, diced into small cubes

Recipe's preparation

    Tamari Almonds
  1. Preheat oven to 150 degrees
    Mix all tamari almond ingredients onto a baking tray and bake for 10-12 minutes, stirring once during cooking time.
    Be careful to not overcook as they will quickly burn.
    Nuts will become crunchier once they reach room temperature.
    These are delicious to just nibble on their own as a snack.
  2. Broccoli Salad
  3. Chop garlic 3 secs/ sp 7

    Add olive oil, apple cider vinegar, mayo, mustard and salt. Mix 4 secs/ sp3.

    Set aside dressing. No need to rinse bowl.
    Add red onion and chop 3 secs/ sp5.

    Add broccoli florets and chop 5 secs / sp 4.5 or until the consistency you like.
    Add mayo and mix 5 secs/ Counter-clockwise operation"Counter-clockwise operation" /Sp 3.

    Place into a large salad bowl.
    Add diced cucumber and dried cranberries.
    Sprinkle with half to all of the tamari almonds.
    Serve and enjoy!

Tip

VARIATIONS
VEGAN: Use vegannaise or leave out the mayo
Swap cranberries for currants
Add cherry tomatoes, quartered.
