Ingredients
Steph's Colour on the Plate Recipe
Hummus
- 2 cloves garlic cloves, peeled
- 1 can Canned Chickpeas, drained and rinsed
- 50 g lemon juice
- 1 tablespoon tahini
- 20 g olive oil
- 1 pinches salt
- 100 g water, ice-cold
Salad
- 1/2 Iceberg Lettuce, chopped reasonable finely
- 10 cherry tomatoes, cut in half
- 1/2 red capsicum, cut in strips
- 1/2 orange capsicum, cut in strips
- 1/4 red onion, finely sliced
- 2 spring onions, chopped
- 1/2 pomegranate, arils to garnish
- alfalfa sprouts, to garnish
- Balsamic Glaze, drizzle on top
- 50 g feta cheese, crumbled

- Blend the garlic and chickpeas to a stiff paste 10 seconds speed 8
- Add the lemon juice, tahini paste, olive oil and salt 5 minutes speed 4. While the machine is still running slowly add the water. Keep going until you have a smooth and creamy paste.
- Vary all these quantities depending on the numbers you are serving.
- Start with a layer of hummus on the platter
- Add the chopped lettuce on top of the hummus
- Then arrange the tomatoes, capsicums and red onion slices.
- Next sprinkle with the spring onions, feta (if using), pomegranate and sprouts.
- Drizzle with Balsamic Glaze

Tip
It looks fab on a long black platter so the colours really ping.
I use dried chickpeas. Soak overnight and use the blade cover recipe on Slow Cook. This is far more economical than buying cans too.
You can freeze the chickpeas in can size amounts - approx 250g or make batches of hummus and freeze that in portions.
It's a great idea for lunchboxes too. Pull out a cube of hummus with carrot sticks etc and let it defrost in time for morning tea or lunch.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
