- 2 teaspoons Vegetable stock paste
- 50 g parmesan cheese cubed

Place parmesan cheese in TM bowl and pulverise for 10 seconds on
speed 9. Set aside for later.
Place onion and garlic in TM bowl and chop on speed 6
for 10-15 seconds.
Place oil in TM bowl and cook on Varoma, "Counter-clockwise operation" speed 2 for 4 minutes,
simmering basket in place instead of measuring cup.
Add chopped broccoli, stock base and water in TM bowl and cook on
100C "Counter-clockwise operation" speed 2 for 18 minutes.
Simmering basket in place instead of measuring cup.
Puree soup going from speed 1-5 for 2 minutes and 30 seconds.
Add parmesan cheese to TM bowl and puree for 30 seconds on speed 5

Needs more parmesan for salt and creaminess, would double it at least I reckon and may try this next time. Otherwise, very nice. Could be a little more silky and less grainy by blending more too.

definitely lacking in salt, agree add 2 tbsp of vegetable stock rather than 2 tsps
Delicious! I did as recipe said but added a zucchini to make up the 800g of broccoli as I didn't have enough. Also added zest of one lemon with the Parmesan. Can do a drizzle of lemon juice in bowl just before serving. Thumbs up!

Beautiful. I increased the stock paste to 2 tbsp and added some thyme infused salt (my stock isn't very salty). Also added a dollop of cream and some more Parmesan to serve.

Hi Margie, I used a non measured splash of olive oil so would have been around a tablespoon.

this is a restaurant quality soup. How much oil didyou use? I added a tablespoon.
