  • 1 tablespoon olive oil
  • 500 grams carrots, Peeled & sliced into chunks
  • 1 teaspoon Ground Coriander
  • 1000 grams water
  • 1 level tablespoon Vegetable stock paste or chicken stock

Recipe's preparation

  1. Add brown onion to mixing bowl & chop 3 seconds, speed 5. Scrape down sides of bowl.  Add olive oil & sauté 3 minutes, 120 degrees, speed 1. Cut carrots into chunks & place in mixing bowl, chop 4 seconds, speed 5. Add water, stock paste & ground coriander & cook 20 minutes, 100 degrees, speed 1. 

    Once  cooked, purée 1 minute, gradually increasing speed from 4 to 8.

    Serve sprinkled with fresh chopped coriander (cilantro).

    Makes 4 serves. 

Tip

Coriander also known as cilantro in some countries.

    Delicious recipe. I used 1/2 leek with the onion. I also used 700gms of carrots and 700gms of water and soup turned out thicker. I puréed it with 2 Tablespoons of sour cream which made it creamier.

    Mine also turned out too watery and bland tasting. I made it as a low calorie option for my 5:2 fasting day. Next time will consider using less water, however this would alter the calorie content and make it less suitable for my fasting day option.

    Far too watery, and apart from definitely tasting of carrot, it didn't have much taste. I ended up adding gravy granules and pepper for taste and cornstarch to thicken it. I prefer the receipe in the Fast & Easy book for TM31. Just as easy, and a tonne of flavour.

    Very easy to make and tastes very nice. I didn't add as much water as the recipe states as we like a thicker soup. Used 650 grams of water. May add a dash of cream to the soup bowl when served. Will make again.

    Delicious and easy! I replaced around 100g of carrot with sweet potato as I had it in the fridge.

    My husband really liked it, I thought it was nice but a little too watery and my step son didn't like it (apparently it tasted too much of carrot!!!)  tmrc_emoticons.) Next time I will reduce the amount of water to see if it makes it a little thicker.
