1 x 600gm Laucke "Golden wholemeal" bread mix
- 400 grams water
- 2 level teaspoons dried yeast

1. Place water & dried yeast into mixing bowl 3 minutes, 37 degrees, speed 1.
2. Add bread flour mix, 6 seconds, speed 6 to combine.
3. Knead 6 minutes, "Dough mode" dough mode. Stay close by as Thermomix will bounce around.
4. Allow to rise in mixing bowl till double in size 30-40 minutes.
5. Transfer dough to flour surface, knockdown & lightly knead into shape & then place in an oiled bread tin. Cover & allow to rise again till double in size. About 30-40 minutes.
6. Bake 200 degrees 30 minutes. Loaf is baked if it sounds hollow when tapped.
Tip
Once cooked remove from tin & allow to cool on wire rack before slicing.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. For the second standing time do you put in the oven with just light on or what do you do?
This was the first time I made bread and was so excited to do so in the Thermomix thanks to this recipe! I used the laucke Barossa sourdough rye, worked perfectly. Thank you
mycooking2: yes, you do. It creates steam in the oven which helps it rise and go crusty on the outside.
I bought a bread mix instead of bread flour and was looking for Thermie instructions to use it. Thank you so much! This turns out great. I followed the packet for ingredients and the recipe for the method. Brilliant!

4. I refilled the squared tin with hot water, and again placed it at the bottom tray of the oven and turned the oven on to 200 degrees Celsius, and let the oven heat up properly. I read another helpful hint, saying that by doing so the crust would firm evenly for the bread crust.
5. When the oven was heated properly, I cooked for 30minutes and this is what I created! So excited and my children LOVED it! It was a bit of a wait but if one sets timers along the way and keeps themselves occupied it doesn’t take long at all!
1. Kneaded for 9minutes
2. First rise I left in the mixing bowl at 37 degrees for 1 hour.
3. For the second rise, after placing the dough in the bread tin and covering with a warm damp cloth, I placed in my cold oven first a square cake tin filled with freshly boiled water on the very bottom tray, then placed the covered bread tin on the tray above it, closed the oven door and let rise for another hour.
