Ingredients
Cauliflower, Zucchini & Leek Soup
- 1 onion, peeled and cut in half
- 1 clove garlic, peeled
- 20 g olive oil
- 2 tbsp TM stock concentrate
- 500 g water
- 1/4 cauliflower florets
- 2 Zucchinis ( Courgettes), Peeled if you dont want a green soup
- 1/2 leek, White part only

I'm cooking this todayRecipe's preparation
- Place onion and garlic into TM bowl and chop 1 sec / speed 7, scrap down the sides.
- Add oil, saute 3mins/Varoma/Speed 1
- Empty veggies from basket int the TM bowl with the water and stock, puree for 1 min ( gradually increasing speed) from speed 1 to speed 9.
- Transfer soup into Thermoserver to keep warm until ready to be eaten. (Thermoserver will keep the soup warm for atleast 1.5 hours).

I couldn't fit all the veggies in the steamer basket so cooked in the bowl and cooked for an extra 5 minutes. Topped with Parmesan cheese 😊
lovely thx.....subbed 1 zucchini with 2 potatoes, skin on, for a different flavour + used whole leek the second time round...didn't over mix it so it was more rustic in texture...prob less stock next time as a bit too salty for me.

Yummy soup.
Way too high salt content!!
Couldn't even get through half a dozen spoonfuls the salt was way too much.
If you make this add half a teaspoon of the stock and work your way up from there.
OMG amazing. Loved it.
Lovely flavours: l also tweeked this recipe by adding 2 cloves of garlic, extra zucchini, cauliflower & a large leek ( white only ) cooked in stock water. Cooked a bit longer & blitzed extra 30 seconds. Served like others Parmesan cheese with a sprinkle of sweet paprika. Thanks for sharing absolutely delicious 😋
