  • 20 grams olive oil
  • 4 Garlic cloves, peeled (whole)
  • 1 Leek white part only, chopped
  • 1 Head Celery, roughly chopped
  • 2 Cardamon Pods, seeds only
  • 1 teaspoon dried thyme
  • 40 grams Vegetable stock paste
  • 1 litre water
  • 100 grams Natural Cashews, pre soaked if possible
  • 125 grams coconut milk

Recipe's preparation

  1. Add Garlic, Leek and Celery chop 3 secs / Sp 7

    Add Olive Oil saute 3 mins / 120 deg / Sp 2

    Add Cardamon seeds and thyme and saute 2 mins / 120 deg / Sp 2

    Add stock and water and cook 15 mins / 120 deg / Speed 2

    Add cashews and puree. Puree for 1 min / Sp 5 and gradually increase to Sp 9

    Add Cocnut milk and mix 30 secs / Sp 3

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     This was tasty, i didn't have cardamon seeds or thyme so used what i had in cupboard. I also subbed in some cauilflower for half the cashews. I found i had i blend this in two batches for the consistency i liked (as i have a TM31).

    Quite a good soup! I do agree the garlic is quite strong (and I LOVE garlic). I added a few other veges that needed using up - a little bit of fennel, broccoli and cauliflower, but apart from that I followed the recipe.

    Lovely, light and fresh. Didn't have thyme so used marjoram...perfectly finetmrc_emoticons.-). Didn't have time to soak cashews, but still very good. Thank you

    I made this soup with a slight variation: excluding the coconut milk and using slightly less cashew nuts.  I did add soft fetta as a garnish, ontop of individual serving

    its a great soup! Thankyou tmrc_emoticons.) im always interested in low cal. options, and particulary thick soups which are achieved without using potatoes (unnecessary carbs) and milk-free which gives a slightly longer fridge life...

    First time I've made a celery soup. I used macadamias as I didn't have any cashews. I'd probably use less garlic next time.
